Ingredients;
Cauliflower - 1
Boiling water - as required
For Coating ;
Rice Flour: 1/2 cup
Corn Flour - 1/2 Cup
Yogurt: 1/2 cup
Salt - 1 Tsp
Red Chilli Powder - 1 Tsp
Kashmiri chilli powder - 1 Tsp
Turmeric Powder - 1/2 Tsp
Garam Masala - 1/2 Tsp
Coriander powder - 1 Tsp
Cumin powder - 1 Tsp
Garlic : 6-7 cloves (crushed)
Ginger: 2 inches (crushed)
Lemon juice- 2 Tbsp
Red food colour - Pinch Optional
Curry leaves- 1 Tbsp chopped
Mustard Oil- 2 Tbsp
Oil for frying
For Sauce;
Tomato Ketchup - 1/4 Cup
Chilli Sauce - 2 Tbsp
Curry Leaves: 9-10 pcs
Green Chillies- 5-6 pcs
Cumin Seeds - 1 Tsp
Oil - 1 Tbsp
Ginger: 1 tbsp chopped
Garlic- 1 tbsp chopped
Method;
1- Clean cauliflower, cut into small florets, keep immersed in warm water to remove any dirt then drain.
2- Boil water and pour over cauliflower florets, let it sit for 15 minutes.
3- Drain water completely , set aside and let it drip.
4- Crush the ginger and garlic with the help of mortar and pestle.
5- To a mixing bowl add crushed ginger and garlic, chilli powder, Kashmiri chilli powder, coriander powder, cumin powder, garam masala , turmeric , salt and red food colour (optional) . Squeeze fresh lemon juice. Mix all the ingredients, it will help to get most of aroma and flavours out of spices.
4- After add yogurt, cornflour and rice flour. Whisk it together and Add water little by little to form a thick flowing smooth batter.
5- In a large mixing bowl, Add cauliflower florets, pour the prepared batter, chopped curry leavesand mustard oil (in the marinade mustard oil combination like no other) , mix it well.
6- Heat oil in a karahi or wok, keep the flame medium to ensure gobi cook through.
7- Add the florets in batches carefully.
8- Flip over with slotted spoon and keep frying until golden brown on both the sides and crispy.
9- to prepare tempering, In a wok , heat the oil , splatter cumin seeds. Add chopped garlic and ginger, & sauté for few seconds. Add tomato ketchup and chilli sauce & let it simmer for few seconds. In the last add green chillies and curry leaves. Add fried Gobi 65 and toss well.
10- Turn off the heat and serve immediately.
