Gorgonzola Piccante (also called naturale, di monte, stagionato, or mountain) is firmer and much stronger than its younger sibling, Gorgonzola Dolce. The flavour is full of lingering nutty notes.
Having been washed repeatedly with a brine during its year or more of cave-aging, Gorgonzola Piccante develops a pronounced aroma, a sticky rind, and a strong bite.
Enjoy with full-bodied red wines or red-grape-based dessert wines.
