L'Etivaz is an authentic Gruyère-recipe cheese crafted in the same way as it has been for centuries.
L'Etivaz is produced by hand over an open fire from May to October in just over a hundred Alpine dairies according to a traditional recipe.
The raw milk is treated directly in the dairy and is bursting with aromas of fine Alpine herbs. Its golden yellow paste is smooth, dense and dotted with protein crystals.
Nutty, meaty, and lightly smoky, the flavour of this cheese is wonderfully rich, complex and lingering.
