Greek Feta Pasta
Makes 4 servings
To make Greek feta pasta, you’ll need:
1/2 cup extra virgin Greek olive oil
8-10 peeled garlic cloves
4 cups whole teardrop tomatoes
1-2 cups cooked chopped tomatoes (canned chopped tomatoes are fine)
Sea salt
3 cups crumbled Greek feta
2 teaspoons dried thyme
2 teaspoons dried Greek oregano
Pinch of hot pepper flakes
2 teaspoons Greek pine honey
1 pound small or medium pasta shells, fusilli, rigatoni or other short pasta
Heat the olive oil in a deep large skillet over medium heat and add the garlic, stirring to soften.
Next, add the teardrop tomatoes and season with a little sea salt. Cool, shaking back and forth to coat in the oil, until the tomatoes start to wrinkle and burst.
Add the tomato purée, and stir all together for a few minutes. Add the thyme, oregano, lemon zest, hot pepper flakes, and honey. Cool the sauce for a few minutes then add the feta, stirring until it melts.
In the meantime cook the pasta of choice in ample salted water, drain and mix into the tomato feta
Sauce. Reserve the pasta cooking liquid and ladle in as much as you need to make the tomato mixture creamy.
Serve immediately!
