I never cook steaks on a grill anymore. Cast iron works so well. For the vey reasons you mentioned.

Great point, Jess! People who want grill marks on their steak are the same people who go to restaurants for the ambience and not the flavor of food. Its the same people who won't go to a hole in the wall mom and pop restaurant because the decor is not elegant, despite their food being delicious. Yet, these same people will then spend an arm and a leg to patronize a fancy restaurant where they feed you a child's portion of food, which you spend hundreds of dollars on because it is sculpted and decorated like something in a museum. I am all for artistry in food, but flavor comes first and should not be sacrificed for visual splendor. If I am that preoccupied by aesthetics, I will just go to an art gallery.

they need you to douse their steaks in sauce, drink more soda and eat more sides. If the steak tastes to good you might not order something with a lot of sodium to improve the meal.

Full seat grid kinda look like they get the edge cooked but everything else is raw
