GRILLED HAWAIIAN CHICKEN SANDWICH | BEST RECIPE & MARINADE (PANDEMIC SURVIVAL KITCHEN)

Ingredients & Measurements:
*FOR THE MARINADE.. (for 2 chicken breasts)
1/4 cup of brown sugar
1/8 cup of ketchup
1/4 cup of soy sauce
1 TBSP of honey
1/4 cup of pineapple juice (I used can)
1 TSP fresh ginger (minced)
1 1/2 TSP fresh garlic (minced)
1/4 TSP salt (used kosher)
OPTIONAL.. for a lil heat, add 1/2 TSP of red pepper flakes
FOR THE GRILLED PINEAPPLE.. (
Pineapple ring(s) (I used can)
1/4 cup of pineapple juice (from can)
1 TBS of brown sugar
1 TSP of honey
Pinch of salt (1/8)
Drizzle of olive oil (for the grill pan)
FOR THE GRILLED "MARINADE" CHICKEN..
(depending on how many sandwiches you are making..will depend on how much chicken you will need)
Chicken breast(s) (rinsed well/patted dry) (*marinated for at least 4 hours..overnight better)
Grill Pan (I used my cast iron grill) Link below!
Drizzle of olive oil
Cheese (your choice, I used jalapeño-pepper jack)
FOR THE SANDWICH..
Roll(s) (your choice, I used bolillo)
Romain lettuce (rinsed)
Bacon (how ever much your bacon hearts desire)
Mayonnaise (for bun)
