I bring to your attention my recipe for Mozart balls! According to Furst's recipe, first, a ball is manually formed from pistachio marzipan in a nougat shell, which is then placed on a wooden stick to be dipped in dark chocolate icing. A stick with a ball planted on it is placed vertically so that the candy cools and hardens. After that, the stick is removed, and the remaining hole is filled with chocolate icing. The finished Mozartkugel is manually wrapped in silver-blue paper. According to the data of the confectionery itself, about 1.4 million Mozartkugels are produced using this technology per year. Everyone has their own recipe!
NUT NOUGAT:
2.5 tbsp (87.5 g) honey, can be substituted with inverted syrup or molasses
130 g hazelnuts (can be replaced with pistachios or other nuts at your request)
150 g sugar
1 egg white C0
0.5 tsp lemon juice
25 ml water
Nuts, if desired, can be chopped or left whole.
Making syrup:
Mix water, honey, and sugar and put in a saucepan with a thick bottom on the fire. Cook over low heat until boiling and after boiling, cook for 10-13 minutes and turn it off. (Let it stand for 1 minute) Beat the protein until fluffy and add citric acid and vanillin to the protein. Then add the syrup in a thin stream and beat it CONTINUOUSly with a mixer at high speed and get a thick mass, beat for another 15-17 minutes until the mass "wraps" around the whisk and add the nuts.
Attention! The mixture will be very thick and you need to work with it very quickly! Prepare a baking sheet with siliconized parchment in advance and lay the nougat in an even layer.
PISTACHIO MARZIPAN:
150g almond flour
50g pistachio flour (or grind pistachios in a coffee grinder to fine grains or flour)
30 g pistachio paste (or urbech)
100 g icing sugar (or sweetener, I took stevia 2 tbsp)
2 tbsp. l Mozart liqueur (you can take kirsch or make cherry water or cherry liqueur, and for children, you can take cherry syrup)
We combine all the ingredients and knead very well!
