From the depths of winter comes a warm and yummy treat you can make without a hint of guilt.
Roberta Toews takes us through this health conscious shortbread cookie recipe (see below), developed by Curu Curu Land’s in-house chef, Fernanda Pagani. The ingredients are simple and you can decorate as you like.
Recipe:
1 cup Almond Flour
1 cup Gluten Free All Purpose flour
3/4 cup Coconut Sugar (alt. Brown Sugar)
1/4 tsp Nutmeg
1/4 tsp Cardamom
1 tbs Cinnamon
2 tbs Ginger Powder
2 tbs Cocoa Powder
Mix until it forms a dough. Roll dough to desired thickness and cut out your favorite shapes.
Icing:
Lime Juice
Confectioners Sugar
Blend to a pouring consistency. Add to a fine tipped icing bottle or small piping bag.
Bake at 350f until golden brown. Let cool before adding icing.
