INGREDIENTS:

Digestive cookies 600 grams
walnuts 100 grams
For the cocoa syrup
sugar 200 grams
bitter cocoa powder 60 grams
water 240 grams
butter 150 grams
vanillin 1 sachet
For the chocolate ganache
fresh cream 120 grams
dark chocolate 120 grams
To serve
chopped hazelnuts to taste
Prepare the chocolate syrup:
In a medium-sized saucepan, combine the sugar, cocoa powder and vanillin. Stir and add the water, mix the ingredients then add the butter. Transfer to the stove and bring to a boil over moderate heat and simmer for about 8 minutes, stirring frequently. The mixture should be reduced by about half.
Remove from the heat and set aside to cool.
Heat a non-stick pan over medium-high heat and toast the coarsely chopped walnuts for about 2-3 minutes.
Break the plain cookies into small pieces in a large bowl, add the walnuts, mix and add the syrup to the warm cocoa, mix everything evenly.
Transfer the compound into a 22 cm diameter springform pan, with the bottom lined with baking paper.
Press well with the back of a spoon to distribute and compact the mixture.
Transfer to the refrigerator to firm up for 1 hour.
After the cooling time, prepare the chocolate ganache: place the chopped chocolate in a container and pour the boiling cream over it, stir until the chocolate is completely melted and the mixture is homogeneous.
Pour the ganache over the chocolate cake and place in the refrigerator to harden for about 3-4 hours or overnight.
Decorate as desired with chopped hazelnuts and serve.
