Holiday Cranberry Sauce
1 cup granulated sugar (plus 1/4 cup more possibly)
1/2 cup brown sugar
1/2 cup water
1/2 cup orange juice
zest of one orange
12 ounces fresh or frozen cranberries, rinsed
1/8 teaspoon cinnamon
Using a large sauce pan, combine both sugars, the water, juice, and orange zest. Whisk until sugars are mostly dissolved. Add the cranberries. Place over medium heat and bring to a soft boil. Watch the pan carefully so that it does not boil over. You may want to cover the pan with a splash screen, to minimize the splattering.
Once the mixture is at a soft boil, reduce the heat to low and continue to simmer for approximately 20 minutes until the sauce has slightly thickened. (It will continue to thicken quite a bit as it cools in the refrigerator.) When the sauce is at your desired thickness, remove from the heat and stir in the cinnamon. Taste to see if the sauce is sweet enough. If it needs more sweetness, stir in another 1/4 cup of white sugar and stir until it is dissolved. It will dissolve quickly because of the hot sauce.
Pour the cranberry sauce into a bowl and allow to come to room temperature before covering and refrigerating. 
NOTE - You can make your cranberry sauce well ahead of your holiday meal. This will keep in the refrigerator for several days.
