INGREDIENTS:
Fermented beans:
500 g dried shelled field beans (+ 50 g for grinding).
½ tsp koji starter
Ingredients:
250 g sticky rice
1 kg long red chili peppers
300 g garlic
500 g salt
30 g neutral clear brandy (min. 50 vol.%)
50 g rock candy
50 g Szechuan pepper
300 g canola oil (+ a little more for the clay pot)
