Lahori Chargha (SHIREEN ANWER RECIPE) Ingredients: Chicken 1 kg White pepper ¼ tsp Nutmeg and mace powder ¼ tsp Carom seeds 1 tsp Black pepper 1 tsp Cumin seed 1tsp Oil 2 tbsp All spice powder ¼ tsp Red chili powder ½ tbsp Green chili pest 1 tbsp Ginger garlic pest 1tbsp Lemon juice 2 tbsp Vinegar 4 tbsp Corn flour 2 tbsp Yellow food colour as required Yogurt 2 tbsp Egg 1 each Oil for frying Chaat masala to sprinkle Method: Take a bowl mix all ingredients till it's turn into fine marination. Then make a cuts on whole chicken with knife and marinate chicken at least for 4 hours. Now steam or roast the chicken till the half done in last for final deep frying the chicken at 180 celcius for full done and serve with chat masala on top. Lahori Chargha Written Recipe : (CHEF MAHNOOR) Ingredients • Kashmiri chili powder 2 tablespoon • cumin powder ½ tablespoon • coriander powder 2 teaspoon • red chilli flakes 1 tablespoon • garam masala ½ teaspoon • turmeric powder ½ teaspoon • black pepper powder ½ teaspoon • cornflour 2 tablespoon • ginger garlic paste 1 tablespoon • chat masala 1 teaspoon • salt 1 teaspoon • oil 2 tablespoon • vinegar 3 tablespoon • egg 1 • zarda color ¼ teaspoon other • Oil to fry • lemon juice 2 tablespoon Sides: • Salad leaves • Green chutney • Onion slices • Garlic raita • French fries • Spicy ketchup Method Prepare Chicken • Wash and pat dry with a kitchen towel. Place deep letter V-shaped cuts on the chicken breast with a sharp knife. Similarly, place 1-2 deep cuts on the leg pieces. Set aside. Marinate • Mix all the ingredients listed under chargha marinade in a bowl. This marinade is enough for 1-1.25 kg chicken. • Take marinade in your hand and apply it all over the chicken. Wear gloves to avoid spice burns. Also, tie the legs of the chicken with a cotton thread. • Marinate chicken for at least 4 hours on the counter in a cool place or preferably overnight in the fridge. Steam • Then place the chicken in the steamer. Make sure the water level is at least ½ inch below the steaming plate. Place the lid tightly and steam for 20-25 minutes until the chicken is tender. Remove chicken from steamer and set aside. Fry Chicken chargha • Before frying the chicken, prepare the platter with fried or baked potatoes, fresh veggies green chutney, and garlic dip. • Fill a non-stick wok with 2-3 inches of oil. Heat the oil on a medium-high flame and place the steamed chargha in it. Cook for 2 minutes on each side until the chargha is thoroughly heated and golden. Turn and remove the chicken with the help of two tongs. • Place the crispy fried chicken on the platter. Pour lemon juice sprinkle chaat masala and serve. #chickenchargharecipe #chargha Patakha Chargha Written Recipe : (CHEF SAAD BUTT RECIPE) Ingredients for Patakha spice mix: • Dried pomegranate seeds 2 & ½ tbsp • Nutmeg ¼ piece • Cloves 7-8 • Mace 2 blades • Cumin seeds 1 & ½ tbsp • Coriander seeds 2 tbsp • Red chili crushed 4 tbsp • Dried mango powder 1 tbsp • Salt 1 tsp or to taste • Kashmiri red chili powder 1 & ½ tbsp • Whole chicken 1 • Yogurt whisked ½ cup • Ginger garlic paste 2 tbsp • Salt ½ tsp or to taste • Lemon juice 1 tbsp • Orange food color ¼ tsp • Corn flour 3 tbsp • oil for frying • Cooked rice 1 cup (garnish) Method : Prepare patakha spice mix: In a spice mixer, add dried pomegranate seeds, nutmeg, cloves, mace, cumin seeds, and coriander seeds & grind well. Take out in a bowl, add red chill crushed, garlic powder, black salt, dried mango powder, salt, Kashmiri red chili powder & mix well. patakha spice mix is ready! Make deep cuts in whole chicken from both sides & set aside. In a bowl, add yogurt, ginger garlic paste, salt,lemon juice, orange food color, quantity of prepared patakha spice mix & whisk until well combined. Add whole chicken, rub well & marinate for 6-8 hours or overnight in refrigerator. In a wok, heat cooking oil & fry marinated chicken on low flame from both sides until golden & pour hot oil in between over chicken (approx. 10 minutes). Take on a grill & let it rest for 10-20 minutes. Fry chicken again on medium flame until golden brown & crispy (8-10 minutes). #chickencharga #patakhachargha
