Sales control everything. Most people want colorful food, most people like their yoghurt to be sweet, etc. So the factory makes what is wanted the most. For other types there are also choices, specialty shops or home made.

Degaulle Dai I am a consumer and I like colorful food.. Do they add white dye to cows milk? How did oranges get their name? Is fruit not already colorful? If your fruit is not colorful enough, maybe you/suppliers are growing it the wrong way or you need an eyesight test.

@djpaulk of course the factory wouldn't add white dye to the milk, because there is no need for it. Fruit, by itself,is pretty colorful, however, I believe when cooked it looses some of the brilliance from before, therefore needing dyes to look pretty again.

Hehe ... first time I see how this is made :) Since I was a little boy, we always did this at home (Bulgaria). You boil the milk till it goes "wheee", then pour it in jars. Put a spoonful of previous yogurt (we call it "soar milk") or a shop one in every jar, then mix it well. After that you coat the jars with a blanket or something, not to let them cool fast and after 3 hours you can safely put your yogurt in the fridge.

im from where yoghurt originated from is, turkey. and we fermentine our own yoghurts at home and dont add anything. it is much better than the yoghurts in supermarkets. believe me. we eat it plain though

It's not as bad as it seems. It's not like you're eating the entire vat of yoghurt they made. In fact, a lot of foods are made to appeal to us through coloring.

i do it by myself, i put a cup of common yoghurt in a liter of milk and done! the important thing to know is the mixed milk\yogh needs to be warm, about 40\45 °c (on a chair near the home radiator) unless doesnt work and the fatter the milk is, the denser the yoghurt will be, btw the first couple or three times you do it, could be a little too liquid but if reutilize the same yoghurt to make it again will become better!

Today, as of 2014, artificial coloring is now banned in yoghurt. Since this How It's Made episode came out in 2002, this new law wasn't passed at that time yet.

QUESTION: I saw a lot of chemicals being added to the fruit. So I don't actually eat "fruit flavored yogurt" but I do eat Plain yogurt mixed with fresh fruit from my fridge. Would Plain yogurt have less chemicals than fruit flavored yogurt? I would like to know because I eat yogurt for my health and I know my digestive system can benefit from Plain Yogurt. Unless plain yogurt has chemicals I'm tweeking my diet...

you should try a plant based yogurt, they are healthier and taste just about the same! I recently changed to non dairy yogurts and tried ' soya yogurt' ... I was quite pleased/ surprised with the result :-) (IDK why i thought it would taste bad, but decided to give it a try anyway). Still healthy and can skip all the unnecessary dairy.

There are organic yoghurts out there that don't have added chemicals or colourings (I buy organic meadow). And generally yes, plain yoghurt contains less chemicals than fruit filled because they don't require additional colourings, flavourings, or preservatives. You might also want to look into natural yoghurt (manufacturers may label these yoghurts either plain or natural). Check the ingredients list... if the yoghurt contains more than milk products and bacterial cultures then you have reason to be suspicious.

You can't make yoghurt without yoghurt because you can't just get the microbes from out of nowhere. If you try to make yoghurt by adding just any old microbe into your milk you'll just end up spoiling the milk. Ryu2012SF, can you not make a point without insulting people?

acidophilus is a good bacteria, it aids digestion by helping the villi in your intestines abosrb additional nutrients, acidophilus also reduces bowel and intestinal issues. Eating products with good bacteria is widely advised when taking antibiotics as it reduces issues caused by longer term antibiotic use.

Yogurt is actually bad for you. It's not just the sugar it's also the artificial garbage and frutose and that nasty stuff that gives it that "distinctive" flavor. I used to eat it til I found out how each lil cup of yogurt has more sugar than they should per ounce.

+Lisa Lasha Here in Bulgaria yogurt is mostly sold without any additives or artificial flavors. It tastes a little sour and a little salty, it's only made out of milk. I don't know if that kind of yogurt is sold where you live, but it's worth to search for it as the bacteria in yogurt is thought to be very good for your gastro-intestinal tract and overall gut health. It's relatively rich in proteins and of course has a nice creamy texture and great taste. You can use it for easy-to-make deserts as well as for some savory dishes.

Yea I know about the "good" bacteria in yogurt however most of that doesn't even live long enough to get thru a persons system. That is why I take probiotics which is protected so the bacteria do not get destroyed. Countries outside the US a lot of times have better food because some of the things that the US allows to be added to food is banned in other countries mostly because it causes obesity.

Here in India, we mostly produce yogurt at home (called dahi here). Its very easy to make and I think its better too compared to factory made ones. Fresh yogurt is already sweet.

Whip cream half a litre, add Vanillasugar, canesugar and sugar a spion of each, when thick stir in Bulgarien youghurt and a bag of frozen berries. Put it in the fridge. It is now 2 liters. Let it sit in the fridge overnight or for a week. You might notice that the youghurt is thicker on top so stir before You eat.
