Brewed this grainbill twice now, firstly with magnum and celeia with wlp585 Belgian saison 3 and then again with the farmhouse yeast a couple of weeks ago with cascade. Both lovely

One of the breweries near me does grisettes 2 or 3 times per year. The have used hibiscus, rose hips, orange zest and other floral ingredients that really make the beer shine. I’ve been interested in making a saison and this yeast seems like the way to go. I don’t have the resources to have a dedicated “funk” fermenter. Thanks for your great content as usual. Hi Robb, thats something I could have mentioned alongside potential fruit additions actually but yeah almost endless possibilities when you start looking at all the adjuncts available, I do like the sound of a grisette infused with citrus peel. Great to know there's lotsa folks fonding on any Belgium style all over the world. Congrats on your successful attempt from the cuntry nobody loves. And a question if ya don't mind to answer, please. So, if you have the chance to taste a bottle of this ale in Dec.-2023 - did it dramatically change in terms of its vinegar acidity? At least, I hope it did :)

Great minds think alike! i literally kegged my 1st grisette a couple of weeks back, i used farmhouse too and was really impressed with the yeast profile at 25c, just right, peppery, i'll try to send you a bottle 🍻

I've always found this style a bit hit and miss having had a few farmhouse that tasted more like farmyard. As you've had such a success, I'll put it on my list to try :-)

Haha yeah I think the mixed fermentation versions can sometimes tend towards the 🐐 flavours

I notice the beers behind you and the name change to reference Nova! What did it end up like and what temp did you ferment at?? 🍻

there will be another video coming up regarding that but to answer your question briefly, 15c fermentation finished well within a week, beer very clean and drinkable after a couple of weeks although flocculation took a while to drop fully bright. Maybe not as crisp and refined as the original with W2124 but for the turnaround time very happy with it

I actually pinched it from the Grainfather S40 which I don't really use, I haven't seen the part for sale anywhere separately but maybe you could order it as a spare part from Grainfather (Bevie)?
