I saw the California cutting board on Amazon and was thinking of buying it. How do you like it or is it practical to use.

It is better as a cheese board than a cutting board imho . It's just a piece of home for me , not so much practical

Do you use fresh potato’s? Or do you use frozen cubed?

I cut up fresh , frozen are precooked so I don't think they would holdup in the canning process

Corned beef is brined and has a seasoning pack , it is very well seasoned and salty . You can add onion and such as you like I don't care for onion in my hash. The ratio is to your discretion , if you like it meaty add less potato or vice versa . Yes I found grinding the meat made it very comparable to the canned which is what I was going for.

@@FannyUrbanhomesteader When I've bought corned beef hash, it came with a seasoning pack outside of the brine it came in. Do you add that season pack or boil the meat in it? IIRC, it had peppercorns and things like that.
