Live on edge of Lake Erie in Fairport harbor . Oh right where many creeks merge in the Grand River and our pier Is where the Grand enters the lake. Tremendous steelhead fishing here. Great video about cleaning. I've been convinced about bleeding a lot of my take home fish. Erie is walleye capital too. The walleye population last 3 years highest in many years. Happy fishing everyone from lake county Ohio

Don't forget about cutting out those pin bones up near the top of the fillet (where the bones came off the spine)...feel for the bones and cut a small V-notch up there and the pin bones should pull right out. The pin bones generally run up until you hit the tail section, or the last 6" or so of the fillet in the tail section. Takes some practice before you get them out just right.

Damn!! Great vid, I have never seen anybody trim the belly like that, but it makes sense, it is always difficult filleting with that belly left on.. I should say yes and no not too difficult but this makes the process way easier cleaner efficient should I learn something else again! You guys are rocking it!

My favorite fillet knife, (Eagle Claw -w- ceramic sharpener) was in my backpack after cleaning and filleting an 80lb halibut in Seward AK, and I didn't remember it was there until I was two or three spots from the TSA inspection at the airport, so it's tossed in the trash. If i'd have put it in the checked baggage, i'd still have it. There was a sign at the inspection station saying "NO KNIVES OR ULUS PERMITTED IN CARRY ON LUGGAGE" with a drawing of an ulu.

Loved the video! There’s small pin bones still in the fillets even after you cut the rib bones off. They start from the rib area and extend maybe an inch beyond the ribs towards the tail. Do you pick these out with a tweezer or cut them out?

I can cut up my own elk and deer, but still haven’t mastered the art of filleting my fish.... Great video I will try your method next time I go out. You explained it better and took your time to show us.

Also what works for me is when I put fish in the vacuum bags I’ll seal them meat to meat. That way if you don’t eat the fish within a couple months and you do end up getting freezer burn, you get it on the skin and not the meat. And typically most people don’t eat the skin.
