There are several ways to fillet Salmon. It comes down to practice and building confidence in your ability to turn out a nice fillet when you are done.
The main goal in “Filleting-Fish” is to remove the bones. With Salmon and Steelhead when you are done with the fillet, you still have the Pin-Bones in the fillet. You have a couple choices...... leave them in or pull them out with pliers.
OR- you can fillet them out.
