How to Cook Dakjim (Korean Soy Braised Chicken)
Main Ingredients:
• Chicken
• Onion leeks
• Onion
• Carrots
• Kamote (sweet potato)
• Pipino (cucumber)
• Ginger
• Garlic
• Japchae noodles (optional)
Seasonings:
• Sugar
• Soy sauce
• Korean rice wine (optional)
• Oyster sauce
• Fish sauce
Preparation:
• Vegetable Preparation:
1. Chop the onion into large pieces.
2. Cut the carrots, kamote, and pipino into large pieces.
3. Mince the garlic.
4. Slice the ginger into either large or small pieces, according to your preference.
5. Slice the onion leeks lengthwise.
6. If desired, mince the green chili for added spice.
Sauce Preparation:
Combine the following ingredients in a bowl:
• 1/2 cup sugar
• 1/2 cup soy sauce
• 1/4 cup Korean rice wine (optional)
• 1 tbsp oyster sauce
• 1 tbsp fish sauce
• 2-3 tbsp minced garlic
• 1 piece ginger (minced or sliced)
Note: These measurements are guidelines. Adjust the seasoning according to your taste preferences.
Cooking Instructions:
1. Fry the chicken until it turns brown.
2. Sauté the green chili (if using), onion, ginger, and onion leeks.
3. After a few minutes of sautéing, add the kamote.
4. Add enough water to cover the ingredients and bring to a boil to cook the chicken.
5. Once boiling, add the carrots, pipino, and the prepared sauce.
6.After 10-15 minutes, add the japchae noodles (if using) and the onion leeks.
7. Boil for an additional 3-5 minutes before serving.
