How to cook Korean Spicy Pork Ribs Stew
Ingredients:
• Pork ribs (800g to 1kg)
• Onion leeks (separate the white parts for garnish)
• Onion
• Ginger
• Garlic
• Potato
• Carrots
• Green chili
• Red chili (optional)
Seasonings:
• Gochugaru (Korean red chili pepper flakes) - 3 tablespoons
• Gochujang (Korean red chili paste)
• Salt
• Pepper
• Korean soy sauce - 4 tablespoons
• Thai fish sauce - 3 tablespoons
• Korean rice wine (optional) - 4 tablespoons
• Plum syrup (optional) - 2 tablespoons
• Sugar - 2 tablespoons
Instructions:
• Pre-cook Pork Ribs: Boil the pork ribs for at least 1 hour.
- Prepare Vegetables:
• Cut the carrots and potatoes into large pieces.
• Slice the onion into large pieces.
• Chop the onion leeks, setting aside the white parts for garnish.
• Slice the ginger.
• Mince the garlic.
- Cooking:
• In a large pot, place the pre-cooked pork ribs.
• Add at least 10 cups of water.
• Add the ginger, green chili, onion, garlic, and onion leeks.
• Season with 3 tablespoons of gochugaru, 4 tablespoons of soy sauce, 3 tablespoons of Thai fish sauce, 4 tablespoons of Korean rice wine (optional), 2 tablespoons of plum syrup (optional), and 2 tablespoons of sugar.
• Boil until the meat becomes tender, usually 30-45 minutes in a pressure cooker.
- Season to Taste:
• Once boiling, taste the stew and adjust the seasoning with salt and pepper as desired.
• Continue to boil for another 10-15 minutes.
- Add Vegetables:
• After the additional boiling time, add the carrots and potatoes.
• Boil for at least 5 minutes or until the vegetables are cooked through.
- Serving:
• Transfer the stew to a serving dish.
• Garnish with the reserved white parts of the onion leeks.
