Both the Costa Ricans and the Nicaraguans argue about whose national dish - the Gallo Pinto - is. And rightly so: while it's made from simple ingredients like rice and beans, it's flattering to the taste buds.
Note: This was my first attempt. I now have about five weeks of experience with Gallo Pinto and have prepared it about 50 times in that time. To this day I have never used cilantro, which is what most Costa Ricans use in cooking.
