My daughters love ramen, and I usually make a simplified recipe for shoyu ramen. They also love miso, so we wanted to try this, and they loved it! I was happy to find shiro miso in our local grocery store. We put a little less sugar because we prefer things more on the savory side, and it was delicious! Will definitely make this again!

just a quick note that backpulver isn't baking soda, it's baking powder - two rather different things. baking soda is 'natron'

as much as I have researched, baking soda is 99% Sodium bicarbonate, where as baking powder is primarily with Sodium bicarbonate, it also contain other additives such as Calcium phosphate (weak acid to prevent it making basic) and starch (blocking agent to prevent reaction). in this case therefore baking soda will work better, but both will work. but thanx for your question!

It’s essentially the same product, just a different regional variety. I even made this with sambal and it still tasted great!

It's capellini, a very thin pasta and it says 3 minutes on the package.

soy egg? you mean Nitamago? you can certainly add it as a topping, but not mandatory. kzitem.info/news/bejne/1I-L1mSnfHOlraw I make alternative recipes for those, who do not have easy access to japanese ingredients. so dont be mad at me.
