When people think of salmon, the belly is not what usually comes to mind. However, it's absolutely delicious and full of beautiful fat that gives it a melt-in-the-mouth texture. Jack attempts to make the most out of the little-used ingredient to make a salmon belly 'welli'. Will it go straight on our menu? probably not, but with a little refinement it could be a future hit at here at Fallow.
