I caught a cold so we're going back to the quick and easy series this week. I found a recipe for a tantanmen by the original Iron Chef Chinese, Chen Kenichi and tried it out. It's pretty quick and easy to make and it tastes awesome. Definitely give this one a shot if you like spicy ramen.

Ingredients:
Soup:
Scallion Oil:
1/2cup vegetable oil
2-3 green onions
4 cloves of garlic
1 inch knob of ginger
Chimajan (thinned tahini):
Tahini made from roasted sesame seeds
Scallion Oil
Niku miso:
200g ground pork
2 cloves of garlic (minced)
tiny piece of ginger (minced)
white part of green onion (minced)
water
1 tsp chicken stock powder
1 tbsp akamiso
sugar (to taste)
soy sauce (to taste)
1/2tsp Sesame oil (optional)
Soup:
350ml Water
1tsp Chinese or Japanese chicken stock powder
Final Bowl:
Minced green onions (white part)
