Ingredients and doses for 4 people:
- 320 grams of Carnaroli or Vialone nano rice
- 500 grams of asparagus
- 40 grams of butter
- 50 grams of Parmigiano Reggiano
- 1 shallot
- 10 basil leaves
- 250 ml. of dry white wine
- organic lemon zest (optional)
- extra virgin olive oil
- sales to taste
- black pepper
For the vegetable broth:
- 2 carrots
- 1 onion
- spring onion
- asparagus stalks
- fibrous part of asparagus
- celery
- degrees of pepper
- sales to taste
Cooking the broth: about 20 minutes to a boil
Cooking rice: about 18 minutes
Creaming: 1 minute
Plating: 20 seconds
