Balsamic-Roasted Brussels Sprouts recipe -
Ingredients:
1 1/2 pound Brussels sprouts, trimmed and cut in half through the core
4 oz pancetta, 1/4-inch diced
1/4 cup olive oil
Salt and pepper
2 tablespoons balsamic vinegar, divided
Directions:
Rinse Brussels sprouts.
Preheat oven to 400 degrees.
In a large bowl, place the trimmed and cored Brussel sprouts, pancetta, olive oil, salt, pepper, and 1 tablespoon of balsamic vinegar. Toss with a wooden spoon or hands.
Spread the ingredients on a roasting pan, and cook (roast) for 20 - 30 minutes, until tender and browned. Remove from oven and drizzle with another tablespoon of balsamic vinegar.
Serves 4
