Looks simple and the finished cakes lookin' SCRUMPTIOUS, definitely a must try here, here in Mexico we have 'tortitas de papa' which is just cooked potatoe with some egg added to bind the tortitas together but grating 250 gr. raw potatoe, with 250 gr.cooked mashed potatoe with all-purpose flour and then adding the chopped green onion, definitely making these,I bet my Great great granddaddy enjoyed these Boxties with great frequency! It's my first time hearing of boxty, but they sure look tasty and I'll give the recipe a try. But being Canadian, I won't be able to resist giving them a drizzle of maple syrup on top.

Yes, I realize St. Boxty is probably spinning in his grave, but it all comes down to the versatility of the potato. I’ve tried boxty with a ladle of chili on top for that chili fries flavour, as well as with curds or melted cheese and gravy as a modified poutine dish. I’ve also wondered how boxty would taste with a mixture of melted butter, brown sugar, and cinnamon on top-maybe with a splash of rum, too-but I haven’t tried it yet. One thing I’ve learned not to do is leave a big bowl of raw boxty mix in the fridge overnight, otherwise it’ll look like asphalt in the morning. @@Lyran7

Im wondering how the grated raw potato cooks inside the patty with only a few minutes of heat per side. Is it supposed to remain rather raw and crunchy inside?

It cooks quite well and the heat is enough to get it to where it needs to be , there us some texture there .

How does the raw potato cook in 4 mins ???

The raw potato is thinly grated , its not as if you are cooking a whole potato . If you were to put the loose grated potato in to a hot pan with oil it would cook even quicker. A large potato cooks quicker than a medium potato , a medium potato cooks quicker than a small potato, a half of a small potato cooks quicker than a whole small potato. A quarter of a small potato cooks quicker than a half of a small potato , should i continue ???? The smaller the pieces obviously the quicker it cooks . Why dont you try cooking it ???

@@TheIrishChef just made it today. They were delicious, I just found that they needed to be ''flatter'' than yours looked in the video in order to be cooked all throughout. I might have missed this detail, but do you fry them in medium or medium-to high heat (I know it's for 2 minutes each side)?

Dam man you let my down no cast iron pan i use cast iron all the time. We have a row of old cottage type houses in our town called boxty row years ago the people that lived in those houses would make and sell boxty to make a little extra money coming up to Christmas so all the lady's would be out trying to out sell their neighbours the banter was great though some of them were related it did not matter when it came to selling the boxty a but all them good old days are gone am glad was around to see them. Now a day the young ones walk around with their heads stuck on a mobile phone the kids don't play the way we did they get home from school and have their heads stuck to a computer screen mind cant say anything am like them my self guess it's a case if you can't beat them join them lol

Correction we use to call them old cottage boxty row the proper name was Tracey Terrace that is what it is knowing at today all the old boxty sellers are long gone sad but true. We raised turkeys for Christmas my aunt knit me a beautiful pullover i wore it to it looked like a curtain you could see though it was so proud of my pullover. We were fortunate Santa Clause never brought us toys but he always brought us cloths maybe the odd time we would have got a tin whistle or a mouthorgan it was all good and we were happy. In Ireland we typically eat these with sausages, bacon, black and white pudding, fried eggs & tomatoes - in the UK, they don't have the white pudding but they introduce mushrooms and baked beans It's all good - whichever way you go
