Servings. 5 x 7 ½ inch Potato Pancakes
Ingredients.
• 1 KG Potatoes, peeled and grated finely (Roosters, Kerrs Pinks, Queens, Russet)
• 2 tsp Salt
• 1 tsp Sugar.
• 2 tbsp Plain Flour.
• Buttermilk (approx 1 cup - see note in recipe for the amount to use).
Method.
1. Peel and grate the potatoes on the finest hole on a box grater. A food processor can be used and with some food processors, you need to use the grater blade to grate the potatoes and then switch to the chopping blade to get a very fine potato mixture (see video). For some food processors, you can use the two blades together.
2. Place the potato mixture in a sieve and drain some of the water from the potatoes.
3. Place the grated potatoes in a separate bowl and set to one side.
4. Pour the potato water into a cup/mug and the white starch which remains needs to be added to the potato mixture. The starch helps in making a good potato pancake.
5. Add the salt, and sugar to the grated potato and mix it in.
6. Take the cup of potato water and empty it, replace the potato water with the same amount of buttermilk.
7. Pour the buttermilk into the potato mixture and give it a good stir. The acid in the buttermilk helps to keep the potato mixture white in colour. Mix in the flour .
8. Heat a frying pan over medium heat and add a drizzle of oil and a knob of butter.
9. Once the pan is hot, spoon portions of the batter into the pan (approx 6 dessert spoons) flattening them into pancakes of your desired thickness.
10. Cook for about 3-5 minutes on one side, or until the edges start to turn golden brown and the bottom is crisp. Look for signs like a dry edge and bubbles on the top, indicating it's time to flip.
11. Carefully flip the pancake and cook for another 1-2 minutes on the other side, or until it is golden brown and cooked through.
12. Continue to fry all the pancakes until the mixture is used up.
13. Serve the boxty warm, traditionally as part of an Irish breakfast alongside eggs, bacon, and sausages.
14. To reheat the boxty, place in a pan with some melted butter and cook for a few minutes on each side until they are heated through and the exterior is crisp.
