+Elenita Galindo usually you can use Lime Stone paste but if not have Using Baking Soda 1 table spoon with 1/4 cup of hot water and let it cold down when it's cold at room temperature , but it's will not as set as Lime stone paste .

Because u cant find mung bean or u don't know this secret indregredient. That why in Vietnam don't use it, but in Vietnam they put borax ( Hàn the) and lye water or potassium carbonated ( nước tro tàu), since we don't use borax here, in the U.S. Borax is not good to consume, that why mung bean flour use in this recipe to make texture crunchy. But I like to use chestnut flour inteads of rice flour, and tapioca

no, we use coconut milk instead of Mungbean. And borax for protect food long time, and just be used at some small food store (i mean illegal store) !

Sorry, but I think u misunderstood. Coconut milk is also use in this recipe. As you see her bowl showing white liquid , it is coconut milk ( exactly like in Vietnam you mentioned " we use coconut milk instead of mungbean", NO and NO....mungbean she used here is a flour ( bột đậu xanh của Thái Lan, they don't sell in Vietnam.) you can't say " use coconut milk instead". It s completely WRONG. Also, please do a research about BORAX ( Hàn the). Borax is NEVER to use for protecting food. This is my first time I ve heard that...BORAX is very bad...how could you said " protect food" , if it is protect food, how the heck they are not using in food...I m very sure you can do a research in Vietnamese you can fully understand..

'Protect food' i mean borax can help food be kept in many days, so this food won't be spoil. and borax is very bad so we don’t use it for food, just some illegal store food use it!^^ (sorry for my bad English)

Yes, my sister-in-law used White lime Shemar she taught me how to make this 40 Years ago, and she used a can that hard Holmes punched in it to extrude the khanom.

Made out from red lime paste dissolve with water. Leave this mixture over9, then get the clear liquid on the top out.....this s call red lime water. About the ratio lime and water to mix, I don't know since she didn't mention here..,she should mention ...I see some1 also asked, but never got the answer

U can buy it from Amazon.com. Type " potato ricer" , there are many of them, but make sure choose the one with 3 disc ( the biggest disc use to make this cendol), ebay also to sell them. Before bed bath beyond carries them, but now, they don't carry 3 disc only 1 disc.
