The secret to a perfectly balanced Black bean is the amount of black bean used. One teaspoon of the paste is all that is required. Black bean is potent because of the salt content and can be quite overpowering so use it liberaly. It should be there in the background only..The rest of the ingredients are used to balance things out. Chinese prefer small pieces of chicken..It's easier when using chopsticks hence the reason for this style...
Recipe
1 chicken breast cut into small matchstick pieces
1 heaped teaspoon of black bean sauce
2 tablespoons dark soya sauce
1 teaspoon of light soya sauce
1 tablespoon of oyster sauce
2 teaspoons of sesme oil
Pinch of white pepper
pinch of MSG
1 teaspoon of sugar
VEG
1/2 onion
1/2 green pepper
1 red chilli
2 cloves of garlic diced
1 spring onion diced
Cornstarch slurry
1 heaped tablespoon and three tablespoons of water
200 ml of water
Add the water to create a sauce and then thicken with the slurry
Method
Boil the chicken for a few minutes then remove
Stir fry you onions peppers garlic and chilli in two tablespoons of vegetable oil
Next add add your pre cooked chicken black bean sauce and the remainder of the ingredients
Add some water to create a sauce
Thicken with cornstarch slurry
