Whole egg .................140g
Granulated sugar ........80g
Cake flour ....................70g
Cocoa powder .............12g
Butter ...........................20g
[Baking]
At 340°F (Preheated with iron plate) for 30~40 mins.
-How to make
1. Prepare the mold
2. Add granulated sugar to whole eggs, mix and heat in a hot water bath to 40-45 ℃.
3. Melt the butter in a water bath at about 60 ° C.
4. Mix the dough with a mixer (high speed) and whisk until it hangs down and leaves a mark.
5. When foaming, mix at low speed for about 1 minute to make the foam finer.
6. Sift the flour and cocoa powder with a fine net and add to the dough
7. Scoop from the bottom with a rubber spatula and mix gently until glossy.
8. Add a portion of the dough to the warm butter and mix, then put it back in the dough and mix until it blends in well (do not mix too much).
9. Pour into a mold
10. Drop the mold from a slightly higher place to remove large bubbles.
11. Bake in an oven preheated to 340°F for 30-40 minutes (preheat the iron plate)
12. After baking, drop it from a high place again to prevent shrinkage.
13. Rest in the fridge for a day
