●Dandan Udon Noodle(for 1 serving)
1 portion ramen noodle
300 ml Dandan soup
some spinach
some bonito powder
some Koumi Rayu
●Dandan soup(for 3 servings)
800 ml thick dashi
15 g butter
1 tbsp flour
100 ml milk
3 tbsp Parmigiano-Reggiano
90 g sesame paste
1 tbsp mayonnaise
2 tbsp light soy sauce
1 pinch salt
●Thick dashi(800ml)
1000 ml water
10 g kombu
30 g Ago
15 g thick-cut bonito flakes
15 g mixed fish flakes
●Koumi Rayu
100 ml oil
20 ml sesame oil
1 piece star anise
30 grain Sichuan pepper
1 clove garlic
small piece ginger
1 g Chinpi
1 stalk Japanese leek (the green part)
2 chili pepper
15 g Korean red pepper flakes
1 tbsp sesame oil
●Udon noodle(for 3 servings)
300 g all-purpose flour
15 g salt
130 ml water
