Hello everyone, here's the list of ingredients along with the steps to make four different types of eggplant dip (salatat’ aswad):
Ingredients for dip #1:
eggplant
half an onion
minced garlic
one tomato
spicy green peppers
tomato paste
salt
ground pepper
peanut butter
water
lemon juice
red chilli powder
Steps to make dip #1:
1) cut an eggplant in squares, add some flour on top, let it rest and then fry them until they are golden. Add a filter as you remove them from the pan to make sure that all the excess oil gets out.
2) in a baking pot, add half an onion chopped up, one spoonful of minced garlic, one spoonful of tomato paste (while mixing it all together), one chipped up tomato, a few spicy green peppers chopped up and mix it together. Add one spoonful of peanut butter, two spoonfuls of lemon juice, one spoonful of red chilli pepper and gradually add some water to make sure it’s not too thick.
3) add the chopped up eggplant, salt and pepper and mix it together. Add more spices to your liking, let it simmer until it’s all mixed well together.
4) Enjoy :)

eggplants
red and green bell peppers
minced garlic
peanut butter
lemon juice
salt
ground pepper
Steps to make dip #2:
1) cut the eggplant in circles, remove the skin, add some flour on top, let it rest and then fry them until they’re golden.. Add a filter as you remove them from the pan to make sure that all the excess oil gets out.
2) put the fried eggplants in a bowl, mash them, add chopped green and red bell peppers, add one spoonful of minced garlic, one spoonful of peanut butter, one spoonful of lemon juice, salt and pepper. Mash them again and mix it all together.
3) Enjoy :)

yoghurt
lemon juice
salt
pepper
garlic powder
onion powder
paprika
vinegar
Steps to make dip #3:
1) Cut the eggplant in circles (keep the skin), add some flour on top, let it rest and then fry them until they’re golden.. Add a filter as you remove them from the pan to make sure that all the excess oil gets out.
2) in a bowl, add half a cup of yogurt, one spoonful of salt, pepper, garlic powder, onion powder, paprika, one spoonful of lemon juice, vinegar and mix it together. Pour the seasoned yogurt on top of the fried eggplants and let it rest.
3) Enjoy :)
Ingredients to make dip #4:
eggplants
yogurt
tahina
lemon juice
salt
pepper
minced garlic
Steps to make dip #4:
1) do some incisions on your eggplant, put it in the oven and let it bake until it’s soft. Once it cooled down, blend it.
2) in a bowl, add half a cup of yogurt, one spoonful of tahina, one spoonful of lemon juice, one spoonful of garlic, salt, pepper and mix it together.
3) add the blended eggplant in the mix and mix it well together.
