How to make fresh cheese at home ? easy and Quick recipe for RICOTTA cheese
Making fresh cheese at home is a very quick and easy process. You need at least 2 ingredients: milk and lemon juice. But if you don't have milk with a lot of fat I recomand you to add some heavy cream. I used 2 litre of milk 3,8% fat and 250 ml heavy cream with 20% fat and I got 500 g of fresh cheese. The more fat the milk has, the more cheese we will optain!
For cream cheese:
Transfer the cheese in a food processor, if necesarly add some whey and mix it until get smooth and creamy!
INGREDIENTS:
- 2 litre of milk
- juice from 1 lemon (about 5 tbsp)
- 250 g heavy cream (optional)
- salt (optional)
