@@KindofCooking I think it is the rule of making fried rice is to add some egg, either in the process of cooking or simply add the egg on the rice after cooking. It can add some moist to the rice by the egg yolk.

Carmen, glad to see you again on YT. Reading the comments from the replicating the BBC fried rice episode, I learned that you were the Carmen from the OTGW days. I would like to propose an idea for your current Channel. Would you explore And validate whether using a blow torch can actually produce “wok hei”. There have been several recent YT videos that show the blow torch method simulates the wok cooking interactions (basically combusting the vaporized oil coming off the wok) that gives the food the wok hei essence. Perhaps, you can repeat one of the your fried rice recipes but add the extra blow torch step to see if it really makes any difference?

You were over reacting the BBC's rice draining. She used biryani rice and she didn't want the sticky version that's why she drained and washed to remove the stickiness. Your recipes look tasty though.

Biryani isn't a type of rice. It's a dish originated in India. I guess you are talking about Basmati, the long-grain rice used in biryani. No, I honestly never heard that Basmati is sticky variation of rice, and IMO it isn't. If it is a sticky rice variation, then my question is WHO THE HELL USES STICKY RICE FOR FRIED RICE. Sticky rice has more sugar content than regular rice. Means it burns way more easily when exposed to fire. Not compatible at all for frying. And be it sticky rice or not, you shouldn't rinse already cooked rice. It absorbs water for God's sake. You want your sticky rice less sticky? Add oil when you cooked it!! A friggin' tablespoon of oil is enough!

I once made a pineapple fried rice using unsalted butter, pineapple juice & rice, it was interesting but it needed something extra for more flavour than just the pineapple. & not used any type of oils once, just unsalted butter.

You could cook rice in a pan, as long as the water-and -rice composition is right. In the BBC, at the first glance when the lady raised the lid, she used too much water. And she rinsed it again. SHE RINSED ALREADY-COOKED RICE. No wonder it was all soggy.

You can make any fried rice without eggs. For example the Korean spam version doesn’t have eggs within, but it’s added on top. We’ll call fried rice free form cooking, put or don’t put what ever you want haha.

sorry but i do have to disagree with u on this one.. im asian and its okay to see they’re using some tools to wash and drain the rice ..it is amazing and for those who doesnt want their hands to get wet then ill recommend this one.. after all it doesnt take away the taste per se of the rice.. i think ur way of commenting is super exaggerating .. especially that we live in a now modern world.. what about using the “rice cooker” dont tell me ur parents will be disappointed because almost all asians are using this device for cooking perfect rice .. 😒 ur words “disgust” is over the top and below the belt.. please think before u click coz it pretty tells or describe of what kind of a person u are..

You know MSG is used to this day in a lot of different foods right? That bag of doritos? MSG Fast food? MSG Deli Meats? You guessed it, MSG. Plenty of restaurants use MSG, including high end ones and even those that specialize in molecular gastronomy. MSG has an undeserved bad wrap.

MSG is still used in all sorts of food (monosodium glutamate is the full name). It basically adds umami to dishes. It got a bad reputation in the 70s because people confused an issue with bacterial contamination in the rice in some restaurants with the effects of MSG.

@@cylontoaster7660 what are the effects of MSG? Aside from making food delicious. To my knowledge the only side effects of MSG are the psychosomatic ones. No correlation between MSG and "MSG symptom complex" aka Chinese restaurant syndrome, has been found.
