With respect, I was taught to boil the sake and mirin for 10 minutes before adding the shoyu. Then to add the shoyu and bring it to a simmer and immediately remove from heat to retain the character of the shoyu. Also a cup of double brewed, aged shoyu can be added (reducing the amount of regular shoyu to 2 cups) to make a more flavorful nikiri suitable for akami dane (red meat fish). In different areas of Japan, like the Tosa prefecture, katsuobushi flakes and kombu are added after the mixture is removed from the heat. The bonito flakes are usually removed quickly while the kombu is allowed to remain in the sauce for a while to leach out the naturally occurring msg and flavor. This sauce is great for natto, I might add. But of course, individual recipes vary widely, and are, for the most part, toranomaki (trade secrets).

Indeed there are various ways to carry out Nikiri Shoyu making depending on each regions and even depending on each restaurants!😊 Some don't even use nikiri but simply opt for pure soy sauce instead. Its really interesting to explore each recipes by going to different sushi restaurants 😆

bo reddude san Yes you can use sugar instead! If so, preferably normal sugar..replace mirin with 1tbsp sugar & additional 2tbsp of sake😉 therefore 9tbsp Soysauce 1 tbsp sugar 5 tbsp sake Hope this helps!! 👍

Hello Aaron san! Compared to simple soy sauce this Nikiri Soy sauce is low in Sodium :D - but higher in sugar content!

Hello Mahbub Uzzal san! You can replace sake with water but the drawback would be that it won't last long and taste would be slightly bland...🥺

yeeeeaaaaa, I know all the details are not super on point, but Sushi Modern has some eff'd up mistakes in their recipe. Also, it would have been great if you had some links to San-J products since you featured them in the video, although the link I'm going to link you to is low in site traffic as of now, but I will add a link to your video.
