Handcrafted chocolates with delicate lemon and bergamot flavors. Featuring sour marmalade and white chocolate ganache covered by tempered dark chocolate, creating the perfect combination of sweetness and refreshing sourness. Definitely try this! 😋👌
🍫INGREDIENTS:
1 layer
- 120g lemon puree (juice)
- 140g sugar
- 5g pectin
- 26g glucose syrup
- vanilla paste
- Pinch of ground ginger
- 2g water + 2g citric acid
2 layer
- 22g heavy/double cream
- 22g lemon puree (juice)
-11g glucose syrup (starch syrup)
- 173g white chocolate. I used Lubeca 34% weisse couverture
- 15g unsalted butter
- 2g ground ginger
- zest of lemon/bergamot (or mix)
🍫200-300g of Dark chocolate for coating. I used Callebaut 811 NV
The chocolate needs to be tempered. In the next video I will show you how I do it. But there are many ways. The chocolate must be melted to a temperature of 45C, cooled to a temperature of 26-27C. And bring it to a working temperature of 30-31C for dark chocolate. If your chocolate is not fluid enough for coating, you can add cocoa butter in the amount of 10-15% of the total mass of chocolate, having previously melted it in the microwave oven.
