The recipe is designed for one 16 cm diameter cake and two tarts each 8 cm in diameter
Shortcrust pastry for tart shells:

INGREDIENTS: 🍓
FRANGIPANE cream:🍦
- 35g almond flour
- 35g soft unsalted butter
- 35g powdered sugar
- 35g egg
STRAWBERRY filling:🍓
- 130g strawberry puree
- 13g glucose syrup
- 20g sugar
- 20g sugar + 3g pectin NH
- pinch of citric acid
MASCARPONE cream:🍨
- 250g mascarpone
- 100g heavy cream
- 50g powdered sugar
- vanilla paste
Strawberry for about 250g
Neutral glaze (optional) for about 20-30g
Neutral glaze recipe:
- 150g sugar
- 150g water
- 3g agar-agar
- 15g glucose syrup
- pinch of citric acid
Mix all ingredients and simmer for 2-3 minutes after boiling. In the end, add a pinch of citric acid. Agar sets at 40°C. For application, dilute glaze weight with 20-30% liquid and heat.

In the video, I forgot to capture the process of laminating the tarts. After baking the tarts with and without weights, you need to cover them with a mixture of egg yolk and 1 tablespoon of heavy cream. Bake again at 175°C for about 5 minutes. Then, fill with frangipane cream and bake for about 15 minutes
