Lubia Polo, also known as Loobia Polo, is a Persian mixed rice dish made with long grain rice, ground meat (either lamb or beef), and green beans. It's one of the Persian mixed rice dishes that are popular in Persian cuisine. Lubia Polo is a simple and straightforward recipe. It only requires a few ingredients that are always available, and the flavour is out of this world.
Persian Lubia Polo Recipe
Ingredients for three people:
Onion: one (medium)
Carrots: one (medium)
Green beans: 250 grams
Minced meat: 300 grams
Rice: Two servings
Barberry: 3 tbsp
Lemon: two (small)
Potatoes: one (for the bottom of the pot)
Oil: as needed
Butter: 15 grams
Dried tomatoes: 4 tbsp (powder)
Tomato paste: 4 tbsp
Salt: 1 teaspoon
Pepper: 1 teaspoon
Turmeric: 1 teaspoon
Saffron: 1/2 teaspoon
Favorite and selected spices:
Cinnamon: 1 teaspoon
Ginger: 1 teaspoon
Masala gram: 1 teaspoon
Paprika: 1 teaspoon
• Finely chop the onion and carrot. Chop the green beans to a size of 2 cm.
• Pour 2 tablespoons of oil into the pan and add the onions. Roast the onion slightly until golden.
• Then add the minced meat to the onions. Fry the meat with onions to change color.
• At this stage, add turmeric, black pepper, gram masala, and paprika and fry.
• Next, add the carrots and a little ginger, cinnamon, and salt to the meat mixture.
• Powder dried tomatoes (or freshly blended tomatoes) and add to the meat mixture with tomato paste.
• Finally, add the green beans. Add the lemon and a cup of water to the mixture and put the lid on the pan and let it cook for 15 minutes on low heat.
• Wash 2 cups of rice and soak it with 4 cups of water for 1-2 hours.
• Add the rice with its water and 2 tablespoons of oil to the pot and put the lid on the pot to boil.
• Then add the butter to the rice and mix a little.
• When the rice water runs out, turn off the gas and set the rice aside.
• Put the desired pot on the heat and add 2 tablespoons of oil and a little salt to it.
• Put the sliced potatoes in the bottom of the pot.
• Then add rice and a mixture of meat and vegetables in layers.
• Pour 1 tablespoon of barberry in each layer.
• Finally, pour a little brewed saffron on the rice.
• Put the lid on the pot and cook the rice over low heat for 45 minutes.
• Thoroughly mix the rice before serving.
