Looks really amazing! A hack that persians use for extra depth is adding the tomato paste when the veges are still browning in the oil, instead of putting it in when uve already cut the fry, it cooks the tomato paste and caramelises it

Great job again Bobby. With regards to the canned beans. Whilst they are convenient, and even though you rinse them under cold water, you can still smell the can smell. I know this as I use them, and last night made a salad including some canned beans and corn. You can smell it. Do the soak method.

The "sticky bits" is called fond and is meant to enhance the flavor of the dish. Recipe looks pretty decent. I do wonder, would you cut all the meat up into the same size to get even cooking or are you just buying pre cut meat? I have followed America's Test kitchen for years and that's something they suggest when browning meat.
