Mike you ever heard of corning a tri tip & making pastrami. Just picked up a cryopack of 5 tri tips & thinking about trying it on one of them.

I've been doing these for a couple of years and they've become a fav of all my friends at parties. One difference I do is to drizzy with honey when adding the brown sugar and butter. Also, great to kick up the heat with some habanero BBQ sauce on the last step.

Great video!! I made these today. Followed your method pretty closely, but I'm not a big fan of sticky wet BBQ, so for the last step, I made one batch with some BBQ sauce, the other I just threw in some more brown sugar. Both came out pretty good... But I think I prefer the ones with just brown sugar. In fact next time I will try to add even more brown sugar or maybe some honey. I want to get a crunchy carmelized coating on them. There was still a fair amount of liquid in my foil wrap, both melted fat and juices.

Hey Joe, actually I do brisket burnt ends very simple. I cut the point off the brisket and cube it. Once in a while I will throw them on a open flame for a few minutes but usually I eat them as is. Thanks for watching

It would help if you place the pork belly on a cutting board and not paper when cutting..... I just did some pork belly burnt ends using Killer Hogg's BBQ and HOT seasoning. The best stuff ever!

Definitely, you just need to separate your coals to one side to create an indirect cooking area.

Most butchers should be able to supply it. Ask the grocery store counter if they have one in the back. Often times they do.
