I was born and raised in St. Bernard, Louisiana. I just found your channel, and have watched several of your videos. You're definitely cooking authentic food. If you haven't already, I hope you write a book, especially for our younger generation. A lot of families just don't cook from scratch anymore, and it's not being passed on to our children.

Charlie you are one of best cooks I've seen on KZitem. I spent almost 6 hours looking at your videos last night. Good stuff. Like I said I love to cook but I'm not beyond learning new ways cooking and seasonings. I'm from Mobile origially, but I've been doing a lot of cooking offshore on the supply boats. Charlie, have you ever considered doing your jambalaya in a rice cooker? I believe that your subscribers would really love a rice cooker tutorial from their favorite cooking teacher. You can modify your recipe for a rice cooker. It's something worth considering.

Rice cooker? Last time I ever seen one of those was in the 90's. Never thought about doing Jambalaya in a rice cooker. I'd still prefer making my Jambalaya in my pot on a stove. In my opinion that is the best way to go. Do they still sell rice cookers?

Charlie Andrews Yeah! A rice cooker bro! And yep, rice cookers are selling like hotcakes. It's a growing trend and I'm about to get me one soon. Which isn't to say that cooking on the stove isn't best or should be replaced, but that variations will enhance your channel and boost your subscriber count. In fact, I checked out a video yesterday by Tony Chachere demonstrating how to make jambalaya in a rice cooker and the finished product looked awesome! So a lot of people are buying rice cookers and I will soon be one of them. The rice cookers comes in various sizes and are real cheap, and appears to be a wonderful appliance to have in the kitchen that won't end up in the cabinet unused. Really up to par with slow cookers in frequent go to usage.

I only tried Jambalaya making it from a package here in The Netherlands. I want to try your version with all those spices. I have to see how I can get my hands on those spices first lol. I made it and it came out great! The only thing I did not have was the chicken seasoning from chef produmme(sp) chicken seasoning, so I substituted with a "gourmet poultry seasoning. I forgot the tomato sauce. I'm going to get the poultry magic, TODAY!!! Thanks,my family loved it.i was supposed to wait until Sunday....lol

Excellent! Yikes. Yes you must make sure you have all the ingredients and seasonings for a recipe. That one ingredient that you didn't add can make ALL the difference in how the dish comes out. Despite the two mishaps I'm glad that the recipe came out good! :)

@@CharlieTheCookAndrews No problem, you should have lots more views for your channel. My first trial version of your jambalaya is on the stove bubbling away right now. The smell is incredible! For the tasso ham, I just cubed up the smoked ham I found locally and sprinkled it with some creole seasoning, brown sugar and cayenne and let it sit in the fridge overnight. The sampling tastings have been fantastic. It'll be on my regular rotation to help endure the long winter here. I've ordered some tasso and real andouille online for future use.

Do you make Cajun grillades? I used to eat that alot on the river boat I worked on. I fix it here at the house but don't have a proper recipe like in a cast iron Dutch oven cooking the meat down etc. thanks

There's a way you can make the jambalaya. You can use chicken sausage and chicken breasts. The spices would be hard to find in your area though. you can make the chicken stock or you may have to settle for the bottled chicken stock.

I`m eating a bowl of your jambalaya as I type this. It turned out Awesome ! Even though I couldn`t get shrimp with heads on, I took the shells from ``raw in shell`` shrimp. It didn`t have near the flavor, but was still better than plain water. I used ``chef Aidell`s`` brand Andouille sausage, it might not be authentic but has good flavor. Also no Tasso ham, had to use chicken. It tastes every bit as good as what I used to have on this cruise ship. mine looked like it had a lot more veggies than yours, but it tastes great, no complaints here. 1st of the month I`ll gladly make a donation, I never thought I would have good jambalaya again. Thank You Charlie, You da Man !

I can`t stop eating lol. The best part is, it filled a 5qt pan (its just me here). Can I freeze this ? It would make a Great quick meal, with fall just around the corner.

I am not sure if this will help you but I get my shrimp from the local Asian Store. I get shrimp, crab and fish for a great price there.

Thank you for this delicious recipe. I've been making Emeril's Food Network recipe for years. It's the only one I've made until today. Yours is much tastier and from the comments I can tell it's authentic. I only have one issue. Emerils' recipe has us adding the shrimp during the last 10 minutes of cooking and the shrimp comes out perfect. In your recipe is comes out rubbery. From now on I'm going to do your recipe but add the shrimp only at the end.

You're welcome! Glad that you enjoyed the video! Yes I've been getting a lot of comments about the rubbery shrimp in my seafood recipes but I've never experienced that ever! I'm working on creating new recipes with the shrimp being added at the end. Again I've never had a problem with the shrimp being rubbery but I must say my shrimp does shrink when I cook it for too long that's the only problem I've had! ☺

DANG MY MAN--You got me nibbling my fingers like a KFC fight night. I just ordered my first try at Tasso from the Cajun Grocer. As a trucker, I have eaten in every state many times but LA stole my heart and taste buds. I make my own Boudin with a NC/VA touch added to it, but you are making that food come out my computer screen. Great vid by the way. Very well presented and great instruction. Thanks Charlie ! @charlieandrews I think restaurants use Chicken because of customers who dont eat Pork. #Jambalaya my favrotie ..thx for sharing

Yes right! The restaurants also do the same thing to the gumbo. Some of them make the chicken and sausage gumbo because it is more child friendly, It's also very easy to make and it's not expensive like the seafood gumbo! You're welcome!

I made this yesterday. I couldn't find Tasso ham so I used chicken thighs. It was really so good! I made enough to share and everyone was really pleased. Thanks for sharing. I'll be doing this again.

I'm not going to lie the box mix was good when I was a teenager. I could probably still make it as good as I used to. Yes now I make my Jambalaya from scratch. I don't use the box anymore! It's been a long time since I used the box! It was great hearing from you my fellow New Orleans native! :)
