Hi Taiji. I really love your cooking. It gives me so many ideas. I have just started eating again after fasting for the last 10 weeks. So I am going slowly. But I have been watching your videos for weeks now. Do you find that when you are away from home in Japan, that you tend to eat more meat? It seemed to me that your earlier videos were much more vegetarian based. Or maybe it’s just a coincidence.
@taijiskitchen

Hi, glad you like my videos!! to answer your question, I think I do eat more meat, when I am not in Japan, since in Germany where I live, we have less fish options. but my consumption of animal protein is about the same amount, just the ration of meat-fish changes. since we are taught to have balanced diet, meaning having good balance of; veggies, carbo, and protein. it is definitely a coincidence, I am just going through my list of recipes. but if you have any requests, I am always happy to hear them! ps next video I will be showing of recipes for when you are sick i.e. after fasting, so it'll be perfect for you!

@@taijiskitchen Thanks Taiji. I am very interested in all that you can share in regard to Shabu Shabu and Donabe cooking. I also really appreciate your knife skills and care in good vegetable preparation without waste. This may not seem like a cooking related idea, but I enjoy very much your explaining proper Japanese custom and practices at the table and for eating. You pronounce very quickly, it’s your native language. But for western ears and even more so, western mouths, the sounds and proper pronunciation together with what each phrase and idea means need to be slowed down. I would like to actually learn from you, if you are willing and patient enough to offer the proper way. I do have one suggestion that you might want to try since you are in Germany. For your garlic and ginger, you should try to purchase the Kuhn-Rikon Epicurean Garlic Press. You don’t need to remove the skins and get perfect mince every time. I’m sure in Germany you will find one at the absolute best price. This is something people back home would probably appreciate you bringing them as a gift. It is very well made and one of most highly rated garlic presses in the world.

My favorite Sushi spot has these. They call them "Sushi Burgers" and they deep fry the whole thing. Inside is spicy crab, spicy salmon, salmon roe, cream cheese, and jalapenos. Topped with spicy mayo and eel sauce. Literally in no way like a burger 😂🤣. But man they are so freaking delicious

Does Takoyaki always just comprise chopped up octopus? Or can it be made with other fillings?
@taijiskitchen
2 жыл бұрын
well, Tako means octopus and Yaki means to grill, so without octopus, it would not be technically TAKO-yaki. but nowadays it is made with other filling, such as cheese, sausage, kimchi, meat, bacon, etc. there is no "wrong" in cooking, so just be creative and make however you like it!

with other rice, it might not work as well, since they don't stick together as well, but since it is wrapped with nori, it could be made with other rice, if you can't get hold of Japanese rice.
