This Pineapple Tarts filling is simple and straightforward. All basic ingredients. No additional spices required. The taste profile and texture is very suitable for making Pineapple Tarts. You can experiment with different spices. Also adjust sugar to your liking. For this recipe, I used MD2 pineapples. These pineapples have a sweet taste. If you prefer to have some sour taste, you can mix with Josephine pineapple.
Recommend to use non stick pan and also induction cooker. If you use the stove, the jam tend to burn easily. You have to mix more frequently.
Ingredients:
2.5kg pineapple flesh (4.2kg whole pineapple) 黄梨肉 2.5公斤 (约4.2公斤黄梨)
350 grams honey rock sugar/rock sugar adjust sweetness to taste 蜂蜜冰糖/冰糖 350克 ,自己改甜度
20 ml vegetable oil/neutral tasting oil 菜油 20毫升
3 tablespoon maltose 麦芽糖 3汤匙
Yield: 1kg pineapple jam/ 一公斤黄梨酱
