Home cooked Pineapple Tarts Jam are definitely tastier and full of aromas, try it and you will surely love it.
Ingredients:
3 Large ½ Ripe Pineapples (preferably Morris pineapple)
300-400gm Sugar(adjust to taste)
1 stick 6cm Cinnamon Stick
1 Star Anise
*approximately enough for 60-70pcs of Pineapple Tarts of medium size.
Preparations:
• Skin pineapple & remove eyes then cut into small cubes.
• Blend cubes in blender.
• Pour blended puree into colander to drain the juice or use cheesecloth to squeeze dry
• Add in sugar, cook on medium fire. Stir till puree become almost dry.
• Then add cinnamon stick & star anise, continue cooking at low heat to a jam-like consistency and until the color turn to golden brown.
• Leave aside to cool before storing.
