The Pastéis de Belém, also called Pastéis de Nata or simply Natas, are small puff pastries, filled with a delicious cream. They are originally from Lisbon, specifically from the Belém Confectionery, and today it is an icon of Portuguese gastronomy. Elsewhere in Portugal they are called pastéis de nata.
INGREDIENTS for 10 cakes:
STEP 1
175 ml of water
175 gr of sugar
Skin of a lemon
1 cinnamon stick
STEP 2
20 gr of cornstarch
25 gr of wheat flour
300 ml milk
STEP 3
5 egg yolks
STEP 4
1 puff pastry (approx 300gr)
