120gBeef (shredded)
30g Onion (sliced)
1 stalk Spring onion
2 small chillies Chilli
half teaspoon Garlic
30g carrots (strip)
2 tablespoon sugar
150ml Sweet and sour sauce
50ml water
Potato starch for coating beef and thickening
1 egg (for marinate)
Plenty of oil for deep fried
Cut 150g beef into strips of 6cm in thickness about 3mm x 3mm.
Soak in cold water for one hour.
Drain marinate with 2g salt mix in a bowl. Add one egg and mixed thoroughly.
Coat the beef strips in potato starch.
Deep fried in oil at 190C for 15 minutes (use a meat strainer to submerge the beef in the oil).
Heat wok and stir fry onions, spring onions, carrots strip, garlic and chilli.
