* Ingredients
(5cm *12cm cake / 5 pieces)
● Vanilla sponge cake
4 eggs (approx. 200-215g)
100 g sugar
A pinch of salt
5ml vanilla extract
25g honey
40g milk
125g cake powder
40g unsalted butter
* Raspberry mixture
180g raspberry puree
70g strawberry puree (if you don't have it, you can replace it with raspberry puree)
45g sugar
4g starch
* Raspberry Cream
85 g raspberry mixture
530g fresh cream
50 g sugar
* Chocolate crumbs
150g white chocolate
(Or strawberry flavor compound chocolate)
Chocolate exclusive coloring
* Syrup
40 g sugar
60g water
5ml Kirsch

Water and sugar
Melt the sugar in the microwave.
Add the kirche and mix.
** Preliminaries
1. Prepare all ingredients at room temperature.
2. Sift the powder.
3. Warm the milk and butter.
4. Preheat oven to 170 degrees.
5. Put parchment paper on the frame.
**how to make
1. Add sugar, salt, honey and vanilla extract to an egg and heat it to 40-42 degrees with a water bath.
2. Whisk at high speed until the color changes to ivory and the volume is full.
- Whisk until the ribbon disappears 3 seconds after the ribbon is drawn.
- Please be fair to the bottom.
3. Add milk between 40 and 45 degrees.
--- Putting in milk first improves the flow of the dough, making it easier to mix the powder.
4. Divide the powder in two and mix.
5. Take out a part of the dough in the butter heated to 55~60 degrees
Mix and match the texture.
6. Mix quickly and smoothly.
7. After panning, remove the air bubbles with skewers.
8. Bang~!!
9. Bake for 12-14 minutes at 160 degrees in an oven preheated to 170 degrees.
10. Press the center lightly with your palm and take it out of the oven if it is not soft and is firm.
11. As soon as you get out of the oven, bang! Beat to drain the steam, turn over to cool.
12. Slice into 3 pieces.
13. Make chocolate crumbs.
14. Make the raspberry mixture.
15. Make fresh raspberry cream and rest in the refrigerator.
