Today, I will make a delicious fresh cream cake with raspberry and blackberry.
After making jam with raspberry and blackberry...
When I used jam instead of syrup and put it in fresh cream, it tasted very good as well as a lovely pink color without any pigment.
And although it is a lovely pink color, it has become a cake that goes well with the modern striped design.
Should I bake it with a biscuit because I have to wrap the sponge cake on the side? I thought about it, but the biscuits can be a little stiff, so I baked them with a sponge cake.
So, when I made a sponge cake with a slightly different ratio than usual, it was good to shape and taste just right.
I made it in two small sizes, but with this recipe, you can make one 18cm cake, so you can choose any number of them.
A lovely cake with a pretty pink color~

(12cm *5cm cake / 2 pieces) or (18cm * 5cm / 1 piece)
♥ Raspberry jam
70 g blackberries
180 g raspberry puree
33 g sugar
3 g corn starch
♥ White chocolate ganache cream
80 g white chocolate
80g warm heavy cream
20 g sugar
350g cold heavy cream
● Vanilla sponge cake
4 eggs (about 200-210g)
100 g sugar
A pinch of salt
5ml vanilla extract
20 g honey
40 g milk
125 g cake flour
35g unsalted butter
♥ Double Berry Ganache Cream
40 g double berry jam
200g White chocolate ganache cream
** Things to prepare in advance
1. Prepare all ingredients at room temperature.
2. Sift the powder.
3. Warm the milk and butter.
4. Preheat oven to 180 degrees.
5. Put parchment paper on the frame.
