Perfect Brisket Recipe
Preparation Time:
Prep: 30 minutes
Salt Brining: Up to 48 hours (I did 15 hours)
Total Cook Time:
8 hours to the stall at 225-250°F
2 hours wrapped at 275°F
2 hours resting in the cooler
Ingredients:
1 18 lb Select Brisket
Kosher Salt
16 mesh black pepper
Brisket tallow (optional)
Instructions:
1. Preparation:
Coat the Brisket: Liberally coat the brisket with kosher salt.
Rest: Allow the brisket to rest uncovered in the fridge for 1-2 days.
2. Smoking:
Set Up the Smoker: Preheat your smoker to 225-250°F.
Add the Brisket: Once your smoker is up to temp, place the brisket fat side up on the middle shelf, if possible.
Spritzing: Spritz the brisket at hours 3, 4, 5, and 6 with a 50/50 mix of apple cider vinegar (ACV) and water, or right up to the stall.
3. Stall Phase:
Stall Temperature: Smoke the brisket until it reaches the stall, typically around 165-175°F internal temperature. This usually takes 5-8 hours.
4. Wrapping:
Wrap the Brisket: Remove the brisket from the smoker at the stall and wrap it in butcher paper. Add beef tallow if available.
Continue Cooking: Place the wrapped brisket back on the smoker and continue cooking at 275°F until the internal temperature reaches 195-200°F, or until it is toothpick tender. This usually takes about 2 hours.
5. Resting:
Rest the Brisket: Remove the brisket from the smoker and let it rest in a cooler for at least 2 hours.
6. Slicing and Serving:
Slice the Brisket: After resting, slice the brisket against the grain and serve.
About Beef Tallow:
Making Brisket Tallow: Render tallow from the trimmed fat off the brisket. Add the fat to a tin and smoke for 4-6 hours. This adds amazing flavor to your brisket.
