Any recommendations for how to brulee without a torch? Like a preferred method?

Preferably I'd go with either the broiler method or the sugar-honey mix method. If broiler - I cast a little more custard base in the mason jars so it's closer to the top of the broiler. And you will want to switch the glass jars for something ceramic to reduce the chance of a glass explosion. Or if you like to live life on the edge you can gamble with the glass. If sugar-honey method - boil a mix of sugar and honey on the stove and let it slightly cool then pour on top of the set custard. It gives a really shiny and glassy appearance. Hope this helps! 😄

Sam here - also if you want to get a torch, the best place to get one is at home depot or lowe's - you can get the kit that does not need a secondary lighter to start the flame for like 25-30 bucks and the gas refills are only 3-5 bucks a piece, much cheaper than torches at a kitchen supply store

why not seal the mason jars with vacuum sealer like meat so if they crack there will be no mess?

Yep you could totally do that, in my experience the mason jars crack due to quick temp changes. So for example it would crack if the creme brulee liquid or mason jar was too cold and I put it in hot water.

Looks great. In your directions there is a mistake. You wrote whisk the eggs whites. I know you mean to say egg yokes.

Lol when I put my mason jar in the water why does it float so badly, I had to put some metal on them so they stay at the bottom, but yours don't float at all, any idea?

Usually I have that problem when I don’t fill it up enough so there’s more air and not enough creme brulee to weigh it down. Another thing is to make sure it’s “fingertip tight”. I don’t know the exact reason but I’ve noticed that when I over tighten it might trap more air and promote floating? Either way, give it a try and see if that helps :)
